Benjamin Bridge Tidal Bay


It’s been a while since I had done a tidal bay and food pairing. My daughters get excited when it’s time to pick and unwrap a new tidal bay. The last one that we revealed was by Benjamin Bridge. I know this one well because we have bought it many times. It’s simply a great wine.

I’ve been wanting to make a mushroom risotto but because I’ve had this one many times and I knew it would pair well with one of our favourite Thai food dishes, which is green curry salmon with vegetables.

I love cooking and eating Thai food. A few Christmas’s ago, I told my husband that I wanted a certain Thai cookbook, but he bought the wrong one. Well, it turns out the cookbook he bought by mistake has been a treasure for us because we haven’t ordered or been to a Thai food restaurant in over five years!

I was fortunate to visit the Benjamin Bridge winery a few weeks ago and what a beautiful Place it was. We were the only people there, so it was extra special. Driving to Benjamin Bridge reminded me of the countryside in Europe.

We had a private tour and tasting. Our tour guide was Brittany, the front of the house manager. She was very knowledgeable and fun to chat wine with.
You can see me down below holding the Tidal Bay that pairs well with any seafood or to enjoy on its own chilled. Their Tidal Bay is made with L’Acadie Blanc, Riesling and Ortega.

Here are some of my favourite Benjamin Bridge wines. I also love their bubbly as well.

If you like green curry, here is a simple green curry recipe! Add protein or vegetables to it if desired.

This is the ingredients you will need:

  • 2 tbsp of green curry paste
  • 1 can of coconut milk
  • 1 cup of chicken or vegetable broth
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 freshly squeezed lime juice
  • cilantro

Direction: In a medium-size saucepan, add a little olive oil to break up the curry paste heat for 30 seconds. Add a full can of coconut milk and 1 cup of broth. Let this come to a boil and simmer for five minutes. Add the fish sauce, brown sugar and some cilantro.
Now your green curry sauce can be used how you wish to.
