Four years ago, our family was on our way to Hawaii for vacation. We had an overnight layover in Vancouver. We were right in Chinatown so before our evening flight, we decided to walk around.
It was nearing lunch time so we saw a place that looked very busy and thought this looks really good. It was called Chef Hung Noodle. It was literally the best Ramen we’ve ever had. My husband took a bite of the broth and he said holy shit this is good. It was so good and we still talk/dream about this lunch. The kids even loved it! If you are ever in Vancouver, I highly recommend that you go there.
If you are dreaming about a good Ramen recipe, I’m going to share a simple and easy recipe that is a family favorite in our home. My son picked it for his birthday supper this year and I often make it once per month. I love this recipe because it’s a meal that no one complains about. I’m going to share key ingredients to make this ramen very good.
I love using my instant pot to make this ramen. Today I prepped the whole recipe in about 20 minutes. Even in a rush it goes fast. I usually prepare the recipe first thing in the morning by adding everything to the pot and store it in the fridge until I’m ready to cook. I also cut all the garnishes so that they are ready. This way I don’t need to worry about prepping the biggest part of supper.
This is one of my dinner tricks that helps making dinner time easy. All I’m left to do is turn the instant pot on, boil the eggs and cook the noodles.
I get all my asian cooking ingredients at Tian Phat Asian Grocery. They are always stocked up well. To make this recipe you need good ramen noodles. This what the Asian market recommends.
Secondly, make sure your baby bok choy is fresh! The grocery stores are usually very good at having fresh bok choy. It should be very green.
Third, you need fresh garnish ingredients. I top our ramen with green onions, cilantro, lime and chili garlic paste. The asian market carries the best chili garlic paste we’ve tried.
Lastly this recipe uses fish sauce. If you’ve never cooked with it, don’t be afraid. It’s part of asian cooking. I’ve been buying this one for a long time. My cookbooks recommended this one.
