I’m sharing a simple limoncello cocktail and easy herb tomato salad that will elevate your next bbq with family and friends.
The first star ingredient is Lemons! If you are a lemon fan, you will love this easy cocktail
The first time I ever had limoncello was at the Italian pavilion in Epcot, Disney. It was a super hot day and that ice cold yellow liquid looked so tasty. Whenever I travel to Europe, limoncello is my desert.
To make this limoncello cocktail you will need three simple ingredients.
Ingredients:
- 2 oz of Limoncello
- 2 oz of Italian Processco
- 2 oz of your favourite sparkling water. I like St. Croix or Fever Tree.
Instructions:
Add the limoncello, processco and sparkling water to a glass. Give it a little stir and add ice. Garnish with a lemon slice.
Now lets move on to the tomatoes.
Tomatoes are a healthy snack to enjoy on their own or in a delicious salad. Tomatoes are a great source of vitamin C, potassium, folate and vitmain k.
This recipe is a take on a caprese salad with some added fresh herbs. There’s something about basil and tomatoes, they are truly a matching pair.
Ingredients:
- 3 Cups of mixed tomatoes cut in half.
- 1/4 cup of diced red onions
- 3 tbsp of fresh mixed herbs. I use basil, mint and italian parsley
- Feta cheese (Add as much as you want. I just sprinkled some on)
Lemon vinaigrette
Ingredients:
- 1/4 cup of olive oil
- 2 fresh garlic cloves minced
- juice of half of a freshly squeezed lemon
- salt and pepper
Instructions:
Place all of the salad ingredients in a bowl. Using a mason jar, add all of the lemon vinaigrette and shake until well combined. Add the vinaigrette to the tomato salad and stir gently combining all of the ingredients.
