It feels like Christmas when it’s time to pick a new Tidal Bay. Unwrapping a new bottle and having no idea which one it will be is very exciting.

We enjoyed this Tidal Bay. What I loved about this wine is that it’s very dry and how fresh tasting it was. It was also my first time tasting a wine from Gaspereau Vineyards.

This Tidal Bay wine was a blend of Vidal Blanc, Seyval Blanc, NY Muscat, Chardonnay and Riesling. They recommended pairing this wine with any seafood such as oysters, mussels, seafood chowder, haddock or crab cakes. Fresh and soft cheese pair well too. Many pork and chicken dishes will accompany this delicious wine.

I decided to cook with salmon as a pairing for the Gaspereau Tidal Bay. My aunt sent me a picture of their salmon dinner last week and my inspiration came from that.

For the salmon, I wanted to grill it with some lemon and fresh dill. I found this recipe and my husband and son though it was the best salmon. Here’s the recipe!

As a side I wanted something fresh and light to go with the salmon. I decided on an heirloom tomato salad with fresh basil pesto, pine nuts and burrata. This recipe came from the cookbook Once Upon A Chef! Here’s the link to the recipe.

The basil pesto was so perfect and tasty. The recipe for basil pesto also came from the cookbook Once Upon A Chef too! It was my first time making it and I don’t think I could use store bought basil pesto now.

My husband and I both enjoyed how well the salmon, salad and the Gaspereau Tidal Bay all married so well. It was a delicious dinner.
