Our 4th blind tasting was from Mercator Vineyards which is located in the heart of Wolfville near the Grand Pre National Historic Site. The vineyard overlooks the Acadian dykelands, which is very special because I am Acadian. My husband was very happy when we opened this tidal bay. Out of the 11 bottles, he was drawn to this bottle.
I woke this week and saw it was going to be another heat wave, meaning it was going to be another beautiful hot and sunny day. I was also excited that this Thursday felt like a friday for us because my husband was taking Friday off making it his first vacation day. I felt like cooking a fun meal, so that made me decide to make lobster rolls.
During the Covid-19 months, a friend had a birthday and she had lobster rolls for her birthday supper. Ever since she mentioned her birthday supper, I knew I would be making my own. However, if you don’t want to make your own lobster roll, I can recommend two lobster rolls that I really enjoyed.
Our favorite one is from the Rhubard Restaurant near Peggy’s Cove. Their lobster roll is simply amazing and very traditional. You can find the Rhubarb Restaurant on Twitter and Facebook. Another lobster roll that I would recommend is from The Canteen on Portland Street. This is an elevated roll. It has crab and a delicious truffle aioli. The Mercator Tidal Bay is a blend of l’Acadie Blanc, Seyval Blanc, New York Muscat, Petit Milo and Chardonnay. This wine had notes of apple, peach and citrus. It is a very refreshing and delicious wine. Their recommended pairing with this wine was anything seafood and suggested bacon wrapped scallops, fish cakes or seafood chowder. When I read that the wine had some citrus notes, I felt that a lobster roll would be a perfect pairing. The winery looks beautiful on their website and they have a restaurant as well. I am looking forward to visiting their winery.
My friend told me that for her birthday supper, she had gone to The Fisherman’s Market and bought pre-cooked lobster. I decided to try this as well because she told me the lobster was delicious. The Fisherman’s Market cooks and shells fresh lobster every day. I was still wondering how tasty this would be and I blown away at how fresh and delicious it was. You actually get a lot of lobster meat in a pound. When I got home, I took a piece to taste and found myself having to stop eating it and save it for the rolls. To make the lobster roll filling, I added the lobster to a bowl with some mayo, green onions, salt and pepper. I squeezed some fresh lemon juice into it. This was super simple and delicious.
I prefer store baked ‘hot dog buns’ from Sobeys. I butter the sides with and grill it on the BBQ. Add the lobster meat and enjoy!
My husband and I enjoyed every single bite of the lobster and I may have ate two, lol.
I wanted something light for a side and this summer I’m enjoying this simple green salad. It has mixed greens, tomatoes, red onions, cucumber, cranberries, pumpkin seeds and feta! Very simple and easy to make. I enjoy a simple maple dijon vinaigrette with it.
Maple Dijon Vinaigrette recipe
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp of grainy dijon mustard (I highly recommend buying it from Ratinaud)
- 1 tbsp of pure maple syrup
- salt and pepper
- In a mason jar, add all ingredients and shake until well combined.
This dinner was well enjoyed on our front porch. It felt like a great summer meal. I highly encourage you to pick up a bottle of Mercator Tidal Bay and either order or make a lobster roll to go with it!
